SICILIAN CANNOLI RECIPE

WHAT IS SICILIAN CANNOLI

The Sicilian cannolo is a typical dessert of Sicilian cuisine, consisting of a fried crunchy shell, filled with a ricotta and sugar-based cream, flavored with orange and/or lemon peel. The dessert is usually decorated with candied fruit and chopped pistachios.

HISTORY OF SICILIAN CANNOLI

The origin of cannoli siciliani is uncertain and a source of debate among historians, but their recipe is thought to have roots in the Arab period of medieval Sicily . Initially, the sweet was a typical specialty of the carnival party, but over time it has become one of the symbols of the Sicilian culinary tradition.

INGREDIENTS AND PREPARATION OF SICILIAN CANNOLI 

Ingredients:

500 g of 00 flour

50 g of sugar

50 g of butter

1 egg

1 yolk

1 glass of dry white wine

1 pinch of salt

peanut oil for frying

For the ricotta cream:

500 g of fresh ricotta

200 g of sugar

50 g of dark chocolate drops

grated zest of an orange

1 tablespoon of Strega liqueur (optional)

Preparation:

Here’s how to prepare Sicilian cannoli:

In a large bowl, sift the flour and add the sugar, melted butter, egg, egg yolk, glass of dry white wine and pinch of salt. Mix the ingredients and knead until a smooth and compact dough is obtained. Wrap the dough in cling film and let it rest in the refrigerator for about 30 minutes.

After resting, roll out the dough with a rolling pin into a very thin sheet. With a cookie cutter, cut discs of dough and wrap them around the metal or wooden cannoli tubes, pressing the edges firmly to seal them.

Heat the peanut oil in a high-sided saucepan, then dip the pasta tubes into the hot oil and fry the cannoli until golden and crispy. Drain them with a slotted spoon and leave them to cool.

For the ricotta cream, mix the ricotta with the sugar, the dark chocolate chips , the grated orange peel and the Strega liqueur (optional). Mix all the ingredients until you get a smooth and homogeneous cream.

When the cannoli are cold, remove the metal or wooden tubes and fill them with the ricotta cream. Decorate them with mixed candied fruit and chopped pistachios.
