ARANCINI: THE TYPICAL SICILIAN RECIPE

Arancini are one of the most loved and known dishes of the Sicilian culinary tradition. These are stuffed rice croquettes, generally meat sauce, mozzarella and peas, which are fried and served as an appetizer or main course.

A bit of history about arancini

The history of the arancini goes back to the period of the Arab domination in Sicily, when these conquerors introduced rice to the island. Later, in the Middle Ages, rice was used to create cakes stuffed with jam, which resembled the shape of oranges. Over time, the preparation of rice has evolved, giving rise to salty oranges, stuffed with meat or vegetables.

INGREDIENTS AND PREPARATION OF ARANCINI

INGREDIENTS:

500g of rice

1 liter of meat broth or vegetables

100g of peas

1 onion

400g of meat sauc

200g of mozzarella cheese

100g of grated parmesan cheese

2 eggs

Breadcrumbs

Peanut Seed Oil for Frying

Salt and pepper q.b.

Preparation:

To prepare Sicilian arancini, follow these steps:

Cook the rice in plenty of salted water. Once cooked, drain and transfer to a large bowl. Add the hot stock to the rice and mix well. Let the rice cool for at least an hour. In a pan, fry the chopped onion with a little oil. Add the peas and cook for a few minutes. Add the meat sauce to the pan and cook for 10-15 minutes until the sauce thickens. Cut the mozzarella into cubes and set aside. Add the grated Parmesan cheese and eggs to the rice. Mix well until you get a smooth mixture. Take a portion of rice and form a ball the size of an orange. With your thumb, make a hole in the center of the ball and fill the hole with a spoon of meat sauce and a piece of mozzarella. Close the rice ball around the filling, compacting well with your hands to prevent it from opening during cooking. Pass the arancini in breadcrumbs, compacting well with your hands to adhere the breading. In a pan, heat plenty of peanut seed oil. When the oil is hot, fry the arancini, a few at a time, until they are golden and crunchy.

Drain them with a skimmer and let them dry on paper towels. Your Sicilian arancini are ready to be served!
