Tuna bottarga is a traditional Sicilian delicacy. It is the bag containing tuna eggs salted, pressed and dried. The bottarga has an intense flavor reminiscent of the sea, is loved by those who prefer seafood. The easiest way to use tuna bottarga is to add it to the sauce for pasta: grated it can be sprinkled on appetizers, croutons, pies and pizzas. Bottarga, in addition to providing proteins rich in essential amino acids, is an important source of lipids rich in polyunsaturated omega-3 fatty acids, valuable compounds for health.

Spaghetti with grated tuna bottarga

 

In a pot of salted water, cook the spaghetti according to the instructions on the package. Drain and set aside. In a pan, heat the olive oil and add the chopped garlic cloves and fry for 1 minute. Add the grated tuna bottarga and mix well to melt in hot oil. Add the chopped parsley and mix well. Remove from heat and add salt and pepper to taste. Pour the sauce over the cooked spaghetti and serve hot.

 

 

Crostini with grated tuna bottarga

 

Cut the baguette into thick slices and toast in a hot oven for 5 minutes. In a pan, heat the olive oil, add the chopped garlic cloves and fry for 1 minute. Remove from heat and add the grated tuna bottarga and mix well. Spread the bottarga and garlic mixture on each slice of toast. Season with salt and pepper to taste.
