SICILIAN CASSATA: THE ORIGINAL RECIPE

Cassata is a typical Sicilian dessert made with ricotta cheese, sugar and marzipan , covered with sugar icing and decorated with candied fruit and dried fruit. It is a very ancient sweet, which has undergone several evolutions over the centuries.

THE HISTORY OF SICILIAN CASSATA

The cassata has ancient origins, dating back to the period of Arab domination in Sicily. Initially, it was a dessert made with bread, honey and dried fruit, which was used to celebrate religious holidays. Subsequently, the dessert was enriched with ingredients such as ricotta and marzipan, up to the recipe we know today.

INGREDIENTS AND PREPARATION OF SICILIAN CASSATA

Ingredients:

500g of sheep ricotta

200g of icing sugar

100g of dark chocolate

100g of mixed candied fruit

150g of marzipan

50g of flour

4 eggs

50g of butter

1/2 glass of milk

Zest of an orange

Zest of a lemon

Granulated sugar to taste

Scorza di un limone

Zucchero semolato q.b.

Preparation:

Here’s how to prepare Sicilian cassata:

Start by preparing the marzipan: mix the flour with the granulated sugar, the grated orange and lemon zest and the eggs. Mix the ingredients until you get a smooth and compact dough. Roll out the marzipan with a rolling pin, forming a rectangle the size of a pan.

Bake the marzipan in the oven for about 10-15 minutes at 180°C until it is golden and crunchy. While the marzipan is cooking, prepare the cream: mix the ricotta with the icing sugar and mix the ingredients until you get a smooth cream. Add the mixed candied fruit and the finely chopped dark chocolate to the cream.

Take a springform pan and coat it with marzipan. Pour the ricotta cream into the mold and level it well.

Cover with another layer of marzipan and let the cassata rest in the refrigerator for at least 6 hours. Prepare the sugar glaze: melt the butter in a saucepan, add the icing sugar and the milk. Work the ingredients until you get a smooth and homogeneous glaze. Cover the cassata with the icing sugar and decorate with candied fruit and dried fruit as desired.
