Busiate are a type of fresh pasta typical of Sicily. The pasta is made in the traditional way, rolling the dough around a wooden stick (called busa, in Sicily) with your hands.

It is a sort of macaroni still prepared by hand with great skill and speed by Sicilian housewives. The dough, made with only water and semolina, is quickly rolled and twisted on a knitting needle, called a buso, creating the classic hollow spiral shape in the centre. The particular shape is used to ensure better cooking of the pasta and tightness of the sauce.

Busiate alla Trapanese


In a saucepan, sauté the garlic in olive oil. Add the chopped tomatoes and cook for a few minutes. Add the almond pesto and mix well. Cook the busiate in plenty of salted water and drain al dente. Toss with the tomato sauce and serve hot. 


Busiate with the mussels


In a saucepan, sauté some garlic and chilli peppers in olive oil. Add the mussels clean and open them on high. Cook busiate in plenty of salted water and drain al dente. Toss with mussels and garlic sauce and chilli and serve hot.
