Trapanese pesto or “agghiata trapanisa” in Sicilian dialect is a variant of Genoese pesto, enriched by our cooks with the best Sicilian tomatoes and adding almonds instead of pine nuts. Its sweet and delicate flavor is suitable for seasoning both hot and cold pasta. Traditionally it accompanies the “busiata”, a typical Sicilian pasta format with a twisted shape. It is one of the specialties of Sicilian cuisine, originally from the city of Trapani. The ingredients used give the pesto an intense and aromatic flavour, perfect for enriching pasta, meat and fish.
