Pistachio Busiate and Rocket Pesto

In a pot of salted water, cook the busiate for about 8-10 minutes or until they are al dente. In a food processor, chop the arugula, pistachios, parmesan, garlic, olive oil, salt and pepper until a homogeneous mixture is obtained. Drain the busiate and season with the freshly prepared arugula pesto. Mix well and serve hot.

Pistachio Busiate with Prawns and Zucchini

In a pot of salted water, cook the busiate for about 8-10 minutes or until they are al dente. In a pan, heat a little olive oil and add the chopped garlic cloves. Cook for 1 minute. Add the cleaned shrimp to the pan and cook for 2-3 minutes, until they become pink. Cut the zucchini into cubes and add to the pan. Continue to cook for another 2-3 minutes. Add the drained busiate to the pan and mix well. Remove from heat and add the chopped pistachios. Mix well and serve hot.
