Slow drying southern Italian oregano is a type of oregano that is grown in southern Italy and is dried slowly to best preserve its aroma and flavor. This drying method preserves the organoleptic properties of the aromatic herb, keeping its aromatic and gustatory characteristics intact. The result is an oregano with an intense aroma and a spicy flavor with notes of lemon and mint. It is used both fresh and dried in Mediterranean cuisine to season meat, fish, vegetables and sauces.

Oregano with grilled eggplant and ricotta

 

In a pan, fry garlic, onion, grilled eggplant cut into cubes, cherry tomatoes and oregano in olive oil. Add a little salt and pepper and cook for a couple of minutes. Add the linguine cooked al dente and season with the sauce, mix well. Remove from heat and add chopped fresh ricotta. Serve hot.

 

Oregano with chicken and peppers

 

In a pan, fry the garlic, onion, diced peppers and diced chicken in olive oil. Add a little salt, pepper and oregano and cook for a couple of minutes. Add the linguine cooked al dente and season with the sauce, mix well. Serve hot.
