Description

Cucunci in brine are a typical ingredient of Sicilian cuisine, it is the fruit of the caper plant. Cucunci are a natural product capable of enhancing the taste of many dishes, with a strong and persistent flavour. They give a touch of unique flavor to your recipes, both hot and cold, but their strong and sour taste is very popular especially in summer, as an ingredient for fresh salads.

Our recipes

Pasta with cucunci cheese

 

Wash and dice the aubergines, sprinkle with salt and let them stand for 30 minutes, this will serve to eliminate the water of vegetation and the bitterness of the eggplant. Wash the peppers, cut them into strips and cook in a non-stick pan. In a mixer put the anchovies well drained, cucunci, a few tablespoons of olive oil and blend everything. Take some cherry tomatoes and cut them into two parts. In a pan, pour 3 tablespoons of olive oil and fry the eggplant with a clove of garlic, add the peppers, olives, cucunci cream, salt to taste. After cooking the pasta, combine our sauce and garnish with a sprinkling of pecorino cheese and basil.

 

Aperitif with the cucunci

 

Throw in the cucunci brine water and soak in natural water changing it a couple of times a day. Then drain and leave to dry on a cloth. Prepare a mince, with the vegetables you prefer, to add them to the capers, adjust with a little oil and salt and mix everything.
