The crunchiness of the orange peel goes well with the granularity of the chocolate making the Modica chocolate bar an even tastier product. The peels come from cultivations of Sicilian oranges, a typical citrus fruit of the Mediterranean area. Cioccolato di Modica PGI is definitely recommended for lovers of real chocolate. It is obtained from a particular “cold” processing of the chocolate which does not allow the sugar crystals to dissolve, which remain intact inside the paste. At a temperature not exceeding 40 °C, the chocolate is mixed with granulated or cane sugar, spices and dried products such as cinnamon, vanilla, ginger, Bronte pistachio or chilli pepper, or with lemon or orange peel. The chocolate bar obtained is shiny with grooves, sometimes more opaque.
