The Sicilian dried tomato, commonly called “Ciappa ri pummaroru”, or half an oval or round sun-dried tomato, has been part of the Sicilian agri-food tradition since the beginning of the nineteenth century. Even today, in some places, during the summer months, it is possible to see Sicilian families engaged in selecting, cutting, salting and drying tomatoes in the sun. In addition to its excellent flavor, the tomato has multiple beneficial properties for our body, it is rich in vitamins A, B and E which makes it a particularly antioxidant vegetable. Furthermore, thanks to its high quantity of water, the tomato promotes diuresis and purification of the organism.

Our recipes

Rice with dried tomato


In a thick pan, heat the olive oil over medium heat and fry the onion and garlic until golden brown. Add the dried tomatoes and cook for 2-3 minutes. Add the rice and mix well for 2 minutes, until the grains become transparent. Add the broth, parsley, salt and pepper. Mix well.

Cover and cook over medium-low heat for 18-20 minutes or until the liquid is absorbed and the rice is cooked.


Pesto of dried tomatoes


In a food processor or food processor, chop the dried tomatoes, almonds, garlic, parsley, Parmesan, olive oil, salt and pepper until you get a smooth paste.

Serve immediately or refrigerate for 2-3 days. Dried tomato pesto is great for seasoning pasta, meat or fish.
