Description

The absolute protagonist of the Sicilian courses is the anchovy paté, balanced and tasty. Suitable for aperitifs, croutons, as a snack and for gourmet sandwiches. Anchovies are rich in Omega3 fatty acids, essential for fighting bad cholesterol and preventing arterial hypertension and cardiovascular disease. It is a thick and velvety sauce, with a dark red color and an intense and decisive flavour. The anchovies used for the preparation of the pâté are of high quality, selected and cleaned to avoid impurities. Anchovy paté can be used in many ways, for example to season pasta, rice, meat and fish, but also spread it on croutons or bruschetta. Furthermore, it is a very versatile sauce, and can be used to enrich soups, to prepare delicious canapés or to accompany cheeses and cured meats.

Croutons with anchovy pate

 

Preheat the oven to 350 degrees, spread a little soft butter on each slice of bread and arrange them on a baking sheet. Bake for 5-7 minutes, until the slices of bread become golden and crisp. In a bowl, mix the anchovy pate with the lemon juice and the chopped parsley. When the croutons are ready, remove them from the oven and add the anchovy pâté.

 

Spaghetti with anchovy pâté

 

In a saucepan, bring to a boil plenty of salted water and cook the spaghetti according to the instructions on the package, until they are al dente. In a bowl, mix the anchovy pate with the chopped parsley, chopped garlic, olive oil, salt and black pepper. In a pan, heat the anchovy pâté mixture over medium heat for 2-3 minutes, stirring occasionally. Drain the spaghetti and add to the pan with the anchovy paté mixture. Mix well and serve hot with the addition of fresh chopped parsley.
